These easy deviled strawberries (AKA keto stuffed strawberries) make the perfect keto treat for Valentine’s Day, anniversaries or even just a romantic night at home.
Whether you try the keto ganache filled strawberries or the keto cheesecake stuffed strawberries, you’ll want to make extra’s to share with your kids. Even they won’t be able to get enough of these kid-friendly healthy stuffed strawberries.
Next time you’re wondering, “what can I do with a bunch of strawberries?”, give these keto deviled strawberries a try.
Being back on keto this Valentine’s Day means that I once again won’t be getting a box of chocolates from The Husband.
While I’m hoping that he got all those hints I dropped about the 3 keto bakeries nearby, just in case he is still oblivious to my gift hints I figured I should make myself a keto treat for Valentines’ Day.
I was just going to keep it simple and whip up some keto chocolate mousse or maybe some keto chocolate covered strawberries. But then I started to feel ambitious so I decided to hit up Pinterest.
I figured I would be able to find some kind of Valentine’s Day treat I could make a keto version of.
When I came across these Nutella deviled strawberries, I knew I had to find a way to make them keto.
How To Make Deviled Strawberries
How do you hallow strawberries?
Most stuffed strawberries are made by cutting the stem off, then carefully scraping out the insides from the top using a melon baller.
Deviled strawberries are a bit simpler and don’t require a melon baller (though you can use one if you have one).
First cut each strawberry in half.
If you like the look of the deviled strawberries with the stems you can leave them on. Otherwise, cut the stems off in a triangle shape leaving your strawberries heart-shaped.
Perfect if your planning on making this treat for a romantic evening.
Then you can easily hallow the strawberry halves by making 3 cuts into them on an angle to meet in the middle. Use the knife to lift the cut piece out, and scrape any remaining pieces to create a space for your deviled strawberry filling.
*Tip: You can also cut a sliver off the bottom of each strawberry to make them sit flat if you find they are tipped over too much.
Keto Chocolate Covered Strawberries
Are chocolate-dipped strawberries healthy?
Keto chocolate-dipped strawberries are.
I debated coming up with a keto dipping chocolate recipe to use with these, but to save time I decided to just use Lily’s Chocolate Chips. Since I have used them to make dark chocolate strawberries before, I knew that they melt easily and work well for dipping.
If you prefer to make your dipping chocolate from scratch you can easily find a sugar-free chocolate covered strawberries recipe to use for this part.
The best way to melt Lily’s Chocolate Chips is to use the double boiler method.
Just boil a pot of water and let it simmer, then place some of the keto-friendly chocolate chips in a metal or glass bowl on top of the pot and stir the chocolate until it is fully melted.
Make sure not to get any of the water into the chocolate, as this will ruin the texture of the chocolate and make it so it doesn’t harden properly once cooled.
*Tip: If you want to melt the chocolate quicker you can do it in the microwave, but be careful as I have burnt chocolate chips trying to melt them this way. If you do use a microwave, make sure you only heat the chocolate for 10-15 seconds at a time, stirring in between.
Once the chocolate is melted, transfer it to a small glass bowl or even a coffee mug. This will help to keep the chocolate warm longer and give you a deeper dipping area if you melted the chocolate in a larger bowl.
Then just dip the tip of each strawberry into the chocolate, and set them on a baking sheet or a tray lined with parchment paper.
How To Make Keto Cheesecake Stuffed Strawberries
For the keto deviled strawberries with cheesecake filling, prepare the strawberries first.
The recipe I came up with for the filling was adapted from my keto cheesecake mousse recipe, I just made it thicker by using less whipped cream.
Make sure to take the cream cheese out of the fridge at least an hour before you need it so it is room temperature when you are ready to use it. Otherwise, it will be hard which makes it difficult to mix in smoothly.
Start by combining the heavy whipping cream with the powdered Swerve (or another keto sweetener if you prefer) and beating it with a hand mixer on high until it looks like whipped cream.
Then stir in the cream cheese and mix on low until it is well blended.
Spoon the filling into a piping bag and fill each strawberry.
*Tip: If you don’t have a piping bag you can use a sandwich bag and cut a corner off to make a tip.
I put the keto cheesecake stuffed strawberries recipe into My Fitness Pal to get the nutrition info, but the exact amount of carbs per strawberry will depend on how many strawberries you use and the size of them.
For this batch, it worked out to 1.6 grams of carbs, with 0.4 grams of fiber, so just over 1 gram of net carbs per deviled strawberry and only 22 calories.
How To Make Keto Chocolate Ganache Stuffed Strawberries
For the chocolate ganache stuffed strawberries, make the ganache before preparing the strawberries.
Heat the heavy whipping cream in a pot on medium heat and remove it immediately when you see bubbles starting to form.
Don’t let it boil, as the cream will burn fast.
I learned this the hard way and while the cream looked fine the finished ganache tasted burnt. I ended up having to toss it and start all over again.
Once the cream has reached the almost boiling point, remove it from the stove, add the cocoa powder and powdered swerve and whisk it until well blended.
Place it in the fridge for 20-30 minutes to allow it to thicken while you prepare the strawberries.
Once the ganache is thick enough to hold its shape, spoon it into a piping bag (or Ziploc bag with a corner cut off) and fill each strawberry.
Like the cheesecake stuffed strawberries, the exact amount of carbs will depend on the size of the strawberries and how many you use.
When I put the keto chocolate stuffed strawberries recipe into my fitness pal it worked out to 2.3 grams of carbs with 1.3 grams of fiber, so 1 gram of net carbs per deviled strawberry and they were only 20 calories each.
